Summer Time, New Summer Cake

Gâteau de Voyage | Summer Strawberry & Ecuadorian White Chocolate

The spring ichigo season has just passed. In summer our imported strawberries are pleasantly fragrant but not always sweet, but it is just good to mix this refreshing fruitiness with the white chocolate which we are rightly proud of using.

High up in the Ecuadorian mountains 3400 km above sea level, dairy cows wander freely and graze on rich, natural grass. Their milk is collected by a group of local milk farmers and used to make white chocolate in chocolate plants right in Ecuador.

Not the same as others, this white chocolate is incredibly rich in milkiness which stands out remarkably even after mixing with other ingredients and baking. This makes a smooth fruity-mellow balance with the summer strawberries.

And to achieve a pleasantly low level of sweetness, we add trehalose to the cake. This natural sugar also helps to keep the cake very moist.

As light as almonds

First appeared in the Lunar New Year Gift Box, our croquants de Cordes turn out to be a favorite of many clients of ours.

So now it is on our ‘Pastry on the Menu’.

This specialty almond biscuit was created in the medieval town of Cordes in Southern France. At some time in the 17th century, there was a tremendous harvest from the almond trees, and an innkeeper lady made a good use of the surplus almonds by baking them with egg white and sugar in her oven at a lower temperature after bread baking. Its texture gave it its ‘crispy”‘name while its terroir stated the origin of ‘Cordes-sur-Ciel’. In every June, there is even a festival held to honour this popular treat in the region.

Like other traditional French treats, croquants are simple, rustic, but could amaze you with aroma, texture and flavour. They are extremely light and crispy, full of flavours of toasted almonds and popcorns.

Our croquants come in 2 packagings: the regular 100 g pack, or you could have them put decently in our Japanese gift box adding just a little extra.

The Ichigo Season

To celebrate the gorgeous Japanese strawberry [いちご, ichigo] season once every year, we bring to you 2 creations showcasing the wonderful sweetness of the ripe fruit.

With the cakes served in a very Japanese way, alongside with ichigo’s best companion – condensed milk, you could discover a pleasant balance between fruitiness and milkiness.

Ichigo

We make our own condensed milk, and then turn it into a rich and smooth mousse with the precious vanilla pods from Madagascar. What encase all these goodness are the light and airy almond sponge cakes. To add a final contrasting sharp note, there is thin layer of our home-made raspberry confit.

Tarte aux Fraises

Or why not go for a strawberry tart if you prefer something crunchy? This tart is lined with sablé Breton, a very crumbly and crispy base. Originating from Brittany of France, we carefully select butter also from Brittany, which is renowned for their excellent dairy products.


If you wish to enjoy a cake more personally, individual portions are also available.

The New, Old Opéra

The origin of Gâteau Opéra is a mystery. It has appeared in the French gastronomic history since as early as the end of the 19th century.

As a devotee of French pâtisserie, anoki here presents Gâteau Opéra on our pastry menu.

The cake is composed of biscuit joconde (almond sponge) soaked with coffee syrup, dark chocolate ganache, coffee buttercream and a dark chocolate glaze. Using premium quality ingredients as always, we notably introduce a single-origin dark chocolate from Peru, giving depth and complexity in the taste of the chocolate ganache.

Based on traditional French recipe and crafted by precise techniques, each mouthful of our Gâteau Opéra shall bring you the classic taste of France.

In this anoki’s very first Christmas, we are bringing you a cheery Noël Gift Box filled with authentic and delectable European treats.


With this festive box, you will enjoy four different treats. Each one of them has its special character, flavour and texture:

Dacquoise of France. Soft and airy, rich in almond flavour. We fill them with single-origin Ecuadorian caramelised milk chocolate ganache.

Arlette of France. The crispiest puff pastry biscuit. Alluring colour and sweetness come from caramel. (We make our own puff pastry of course)

Zimtsterne (cinnamon stars) of Germany. Nicely dense and slightly chewy without being stiff. A heart-warming taste of cinnamon which is enjoyed during Christmas time.

Vanillekipferl (vanilla crescents) of Austria. Another Christmas specialty. Light and short, these little moons just crumble on your tongue.
